A nice way to add some whole grains to a savory crepe appetizer or first course. For smaller crepes, use a smaller pan.

Recipe Ingredients for Nancy's Buckwheat crepes

3 eggs
1/2 cup skim milk
1/2 cup buckwheat flour
1/2 cup all-purpose flour
1/4 teaspoon salt
2 teaspoons canola oil
1/2 cup carbonated water

Recipe Directions for Nancy's Buckwheat crepes

  1. Beat eggs and add skim milk and canola oil. Combine flours and salt together and then add to wet ingredients. Stir well - put in refrigerator for at least one hour or longer to give the starch granules time to swell.

  2. Oil a crepe pan and heat until a drop of water bounces over the surface.

  3. Using a ladle, pour batter into center of hot crepe pan and swirl the batter around until it meets the pan edges. Cook until bubble form and the surface of the crepe is no longer shiny. This takes about 30 to 40 seconds. Carefully slide a large spatula under the crepe and flip it to the other side. Cook another 15 seconds or so. Slide finished crepe to a plate or layer of waxed paper and reoil crepe pan again and proceed with the next.

  4. I like to fill these crepes with mixtures of chopped cooked mushrooms, minced greens, onions or garlic, and a bit of sour cream to moisten. Roll up, place in a greased baking dish, cover with foil and heat in a 300 degree oven for 20 or 30 minutes to completely warm up. Serve hot or at room temperature.

  5. Note: For large crepes, a ladle holding slightly less than 1/3 cup is fine. Smaller pan needs maybe 1/4 cup ladle.
