I like to serve with a dollop of fat free sour cream and/or shredded reduced fat cheddar cheese as garnish***Add calories as appropriate

Recipe Ingredients for Nancy's Black Bean Soup

4 cups black beans, cooked
1 small onion, chopped
4 oz ham, chopped
2 cups tomatoes, chopped
3 cups water(3T no sodium chicken stock)
3 carrots,chopped
2 stalks celery, chopped
1 tsp chili powder
1 tsp cumin
1/4 c fresh cilantro, chopped

Recipe Directions for Nancy's Black Bean Soup

  1. Rinse and sort beans, cover with 2 inches of water and bring to rapid boil for 2 minutes.Cover and let sit for 1-4 hrs till tender,rinse again.

  2. Add all other ingredients and simmer till veggies are tender.

  3. Can serve with shredded cheese or sour cream Add calories as warranted.
