Nana Miller's recipe for the best South African scones, traditionally served with whipped cream and apricot or strawberry jam. Use a very light hand to ensure a light and flaky scone.

Recipe Ingredients for Nana's Scones

2 cups wheat flour, white, all-purpose, enriched, unbleached
1 tbsp baking powder
1/4 teaspoon salt
2 tablespoons butter without salt
1 egg
1/2 cup 2% milk

Recipe Directions for Nana's Scones

  1. Preheat oven to 450 degrees and line a baking sheet with parchment.

  2. In a medium bowl, whisk or sift together the flour, baking powder and salt. Rub the butter into the flour mixture with your fingers, working quickly. (The mixture should be relatively rough, with pea-sized pieces and should not be as fine as cornmeal.)

  3. In a liquid measuring cup, measure 1/2 cup milk and add the egg. Whisk together. You need 3/4 cup liquid, so add water, if needed, to the milk and egg mixture until it measures 3/4 cup.

  4. Add the egg mixture, all at once, to the flour mixture, and mix lightly with a fork until it just comes together to form a shaggy dough. Turn the dough out onto a floured surface, patting it into a 1/2- to 3/4-inch rectangular or circular slab. Use a biscuit cutter (2 3/4 inches across) to cut the scones, employing a biscuit-making technique of pressing the cutter straight down without turning or wiggling it, and lightly peeling the surrounding dough away from the scone before transferring it gently to the baking sheet. Re-pat and reshape dough scraps until you have 8 scones, again with a light hand!

  5. Bake for 8 to 10, minutes or until light golden brown, rotating the baking sheet (back to front) three-quarters of the way though baking if needed to ensure even browning.

  6. Serve with whipped cream and apricot or strawberry jam.

  7. Scones keep in an airtight container at room temperature for 2 days.
