Amazingly moist and yummy low calories banana bread!

Recipe Ingredients for Nanaberry bread

544 g bananas
2 tbsp lemon juice
80 g soy milk
120 ml maple syrup
240 g wholemeal flour
3/4 tspn baking powder
3/4 tspn baking soda
1/2 tspn salt
240 g frozen berries

Recipe Directions for Nanaberry bread

  1. Preheat oven to 350F. Spray or wipe a 9x5-inch loaf pan with oil (I used a silicon loaf pan).

  2. Mix the soymilk with 1 tablespoon of the lemon juice and let stand until it curdles.

  3. In a large bowl, mash the bananas and add the remaining lemon juice and soy milk and syrup. Stir well to combine. In a separate bowl, combine the flour, baking powder, soda, and salt. Add the dry ingredients to the banana mixture, and stir just until the mixture is well-combined. Let the berries thaw then fold them in.

  4. Spread the mixture evenly in the prepared pan and bake until a knife inserted in the center comes out clean, about 50-60 minutes. Allow to cool before cutting and serving.
