I got this recipe from Jamie Oliver, he used fish but it's just as good with chicken.

Recipe Ingredients for Naked Chicken

2 lb Boneless, Skinless chicken breasts
3 tbsp olive oil
3/4 cup Sweet Sue Chicken Broth reduced sodium
1/2 cup capers
3 cloves garlic
2 oz basil
2 oz parsley
15 oz tomato
1/2 cup lemon juice

Recipe Directions for Naked Chicken

  1. Mince garlic. Chop basil and parsley. Dice tomatoes.

  2. Spread 1 T of olive oil around bottom of a baking pan, then put chicken in pan. Cover chicken with tomatoes, garlic, basil and parsley. Then pour chicken broth, lemon juice and the rest of the olive oil over it all. Cover tightly with tin foil and let it marinade for at least 1/2 an hour, no more then 2 hours.

  3. Heat oven to 350 and bake until done. (The cooking time changes depending on what type of meat you use.) You can exchange the breasts for boneless/skinless chicken tenderloin or a nice white fish, it's all wonderful.

  4. Other exchanges: 3/4 c dry white wine for the chicken broth. 1 handful of pitted black Greek olives, halved, for the 1/2 c capers. 1 pint of cherry tomatoes, halved, for the 15 oz of diced tomatoes.

  5. If you don't want to dirty a pan fold up a long piece of tin foil into a bag and use that to bake the chicken in, edges folded tightly to keep the juices from leaking.

  6. The original recipe says it serves 4 but we usually get 6-8 out of it depending on how hungry we are and how plentiful the side dishes are. :)

  7. PS. This makes a killer sandwich the next day. Chicken/fish with some fresh lettuce & tomato slices and a tiny amount of mayo mixed with some of the juice & veggies/herbs for a great spread, yum!
