Nacho Taco Salad from "Vegan on the Cheap" by Robin Robertson. Oils removed and homemade tortilla chips replace the store bought variety.

Recipe Ingredients for Nacho Taco Salad

15.5 oz Black Beans
15.5 oz Pinto Beans
1 serving Salsa
2 tsp Chili Powder
4 tortilla 6" Low Carb Whole Wheat Tortillas 10ct
24 oz Iceburg Lettuce
2 plum tomato Tomatoes, Red, Ripe
24 olives Large Pitted Olives
5.33 oz Nutritional Yeast
1.5 oz Cornstarch
1.25 tsp Sea Salt
0.5 tsp Garlic Powder
2 cup (8 fl oz) Water
2 tbsp Lemon Juice, Canned Or Bottled
0.333 oz Apple Cider Vinegar
1 tsp Yellow Mustard

Recipe Directions for Nacho Taco Salad

  1. In large saucepan combine beans, 1 cup of salsa and chili powder. Use fork to mash a portion of the beans. Cook on medium heat stirring occasionally to heat through.

  2. Cheese Sauce: In a small saucepan combine the yeast, cornstarch, salt and garlic powder. Whisk in the water and bring to a boil, then reduce heat to medium and cook until the sauce thickens, about 1 minute. Remove from heat and stir in the lemon juice, vinegar and mustard.

  3. Cut tortillas in 6 pie shaped pieces and bake at 400 for 10 minutes.

  4. Divide the baked tortilla "chips" among plates or shallow bowls. Spoon the bean mixture over the tortilla "chips" Drizzle with the Cheeze Sauce. Sprinkle on the lettuce and tomato and serve at once.
