Easy enough to make weeks of lunches, was still good after freezing. Was supposed to use 2% Velveeta but couldn't find it.

Recipe Ingredients for Nacho Soup - 18 servings

1360 grams Chicken, Breast, Meat Only
2 cup (8 fl oz) Water
2 can (12 oz) yields Corn, Sweet, Yellow
1/2 cup, chopped Peppers, Jalapeno
2 1/2 cup Tomatoes Mexican Diced with Jalapenos Bell Peppers and Spices
3 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
32 oz Cheese Regular
750 grams 1% Partly Skimmed Milk

Recipe Directions for Nacho Soup - 18 servings

  1. - Liberally season the chicken with salt & pepper, and cook at 350 for 25 minutes. Cube and set aside.

  2. - In a large pot, combine water, Mexicorn, tomatoes, tomatoes, and potatoes ? bring to a boil until the potatoes are softened

  3. - Add the chicken and cheese, cooking on low until the cheese is melted.

  4. - Add milk, simmer until hot.
