These gluten-free fish cakes are delicious

Recipe Ingredients for N.E. Cod Cakes

3 pound halibut
3 pound potatoes, russet
2 tbsp salt
1 tbsp black pepper
2 ounce mustard, dijon
2 eggs, lightly beaten
1 oz chives
1 oz thyme, fresh, chopped

Recipe Directions for N.E. Cod Cakes

  1. Poach fish until soft - drain - cool

  2. Cook potatoes until soft, let cook slightly, roughly mash

  3. Add all ingredients together in a bowl and mix well but don't kill it :-)

  4. Portion into 4 oz cakes, dust with cornmeal and saute until golden brown
