Homey recipe -- good for leftover baked or boiled potatos

Recipe Ingredients for Myla's Curried Beef and Potatos

3/4 lbs beef sirloin or top round steak
1/2 lbs potatos (about 3 small reds)
1/2 cup beef broth
2 tsp cornstarch
1/4 tsp salt (may omit)
1 nonstick spray coating
3/4 cup onion, chopped
3/4 cup green or red pepper
1 tbsp cooking oil
1 tsp curry powder
1 medium tomato, coarsely chopped

Recipe Directions for Myla's Curried Beef and Potatos

  1. Partially freeze meat. Thinly slice against the grain into bite size strips. Set aside

  2. Cook peeled, sliced potatos in boiling water for 5 minutes. Drain and set aside (or use leftover potatos

  3. For sauce, stir together beef broth, cornstarch and salt (I omit salt)

  4. Spray wok or large skillet with nonstick spray coating. Heat over medium high heat. Add onion and stir fry 2 minutes. Add green pepper and stir fry 2 more minutes. Remove from wok.

  5. Add oil to hot wok. Add beef and curry powder. Stir fry 2-3 minutes or til beef is done. Push beef from center of wok.

  6. Stir sauce and add to center of wok. Cook and stir until thickened and bubbly. Stir in onion mixture, potatoes and tomato. Cook and stir all ingredients for 1 minute or till heated through.
