Recipe Ingredients for MyBread_WholeGrain

4 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
0.67 cup Whole Grain Rye Flour
0.67 cup Wheat Flour, Whole-grain
2 tbsp Butter
2 tbsp Pure US Grade A Clover Honey
1 tsp Salt, Table
1 oz Yeast
1 cup Milk, Reduced Fat, Fluid, 2% Milkfat

Recipe Directions for MyBread_WholeGrain

Dilute milk with water -- total of 2 cups liquid. Heat to 120F. Dump into a large bowl along with honey, sugar, salt, and butter. Mix well, verify temp before adding yeast. (1 Tbsp ). Mix again. Add 2 cups white flour and mix very well -- this is where the gluten formation starts. Add the rye and whole wheat flours and mix further. Add enough of the extra white flour to make a fairly stiff dough. Turn out and knead. Let rise until double. Punch down, form into loaves and let rise until double. Bake at 375-400F for 35-45 minutes.
