Recipe Ingredients for My Zucchini Bread

3 eggs
3 1/2 teaspoons vanilla extract
3 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1 cup oil
3 cups whole wheat flour
2 cups sugar
3 cups zucchini, grated
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder

Recipe Directions for My Zucchini Bread

  1. Preheat oven to 350 degrees.

  2. Mix vanilla extract with eggs; beat and whisk until well blended. Add nutmeg, cinnamon, flour, oil, and zucchini to egg mixture and blend well in mixer.

  3. Add sugar, baking soda, salt, and baking powder; blend well.

  4. Place mixture in 2 prepared 9-inch loaf pans and bake 1 hour or until inserted toothpick comes out clean.

  5. Bake muffins for 15 to 20 minutes.
