Made a bit healthier by using wheat flour and reducing the sugar from 1 cup to 3/4 cup

Recipe Ingredients for My Zucchini Bread

1 cup all purpose flour
1/2 cup whole wheat flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
3/4 cup raw sugar
1 cup zucchini, finely shredded
1/4 cup olive oil
1 egg
1/2 tsp lemon zest
1/2 cup pecans

Recipe Directions for My Zucchini Bread

Combine dry ingredients in a bowl. In a seperate bowl, combine wet ingredients. Add the dry ingredients to the wet and stir until just combined. Pour batter into a prepared bread pan and bake at 350 for 50-60 minutes. Cool 10 minutes on a baking rack. Remove from pan and let cool on rack.
