This is huge. Need a big pot for simmering on the stove. I used the wok - first for browning onion and herbs and spices, then just added the liquid and then just simmered with a lid on - all in the same wok. Has worked quite well.

Recipe Ingredients for My version Vegetarian Chili

1 large onion, diced
1/4 red pepper, diced
1/4 green pepper, diced
4 cloves garlic, minced (or baked and sliced)
28 oz chopped tomatoes (with liquid)
2 tbsp tomato paste
38 oz red kidney beans, drained
32 oz beans, mixed
16 oz black beans
16 oz corn, kernels
2 tbsp chili powder
1 1/2 tsp cumin, powser
2 tbsp dried oregano, choped
1 tsp cayenne
1 tsp salt
2 tsp sugar
1 tbsp lemon juice, fresh squeeze
4 fresh tomatoes, chopped
1 hot pepper, jalapeno, fresh, seeded, chopped fine
3 scallions, sliced fine

Recipe Directions for My version Vegetarian Chili

  1. In oil, saute chopped onion, and brown. Then add garlic, peppers, herbs, spices. Saute until blended.

  2. Add canned tomatoes and tomato paste, and simmer until blended.

  3. Add all (drained and rinsed) canned beans and corn.

  4. Mix well, taste and adjust flavours, e.g. lemon, chili, salt and sugar to taste.

  5. Cover and simmer gently for 1-2 hours.

  6. Cool, and divide into containers.

  7. Keep some fresh in the fridge for now.

  8. Freeze some containers for later.

  9. There is a lot, so should last awhile.

  10. Drizzle with Udo's Oil before eating, if i have some.
