This is my version of the wonderful recipe on the Quaker Oats lid. We don't care for raisins in food so they were deleted. I added flax and some Cheerios for a twist. These were a bit stiff but I gave a splash of fat free milk. I would have preferred applesauce but was fresh out. These were really yummy!!

Recipe Ingredients for "My Version" Quaker Oats' Vanishing Oatmeal Cookies Recipe

1/2 pound Smart Balance butter
1 cup Splenda brown sugar
1/2 cup Splenda
2 eggs
1 tsp vanilla
1 1/2 cups unbleached flour
1 tsp baking soda
1 tsp cinnamon
2 cups oats
1/4 cup flax,ground
1 cup Cheerios
1 tbsp fat free milk, if needed

Recipe Directions for "My Version" Quaker Oats' Vanishing Oatmeal Cookies Recipe

  1. Preheat oven to 350F.

  2. Beat together butter and sugars until creamy. Add eggs and vanilla; beat well.Add combined flour,baking soda and cinnamon. Stir in oats,flax and Cheerios.

  3. Drop by rounded tablespoons onto ungreased cookie sheet.

  4. Bake 10-12 minutes.

  5. Cool one minute, then move to wire rack.

  6. Bar cookies: Bake 30-35 minutes in ungreased 13x9 inch metal baking pan.
