Chicken broth based vegetable soup. Serve with rice, pasta or buttered toast.

Recipe Ingredients for My Vegetable Soup

2 T Extra Virgin Olive Oil
2 c. Onions, sliced
2 t garlic, minced
12 oz. Mushrooms, sliced
8 oz carrots, frozen
32 oz. Great Northern Beans
2 c. potatoes, diced
8 c. low-sodium chicken broth
2 T rosemary, chopped
2 t Italian seasoning
1 Salt and pepper to taste

Recipe Directions for My Vegetable Soup

  1. Saute onion, garlic, mushroon, salt, pepper and italian seasoning in olive oil until vegetables are cooked.

  2. Add in carrots, white beans and potatoes. Stir to coat.

  3. Pour in chicken stock and add the chopped rosemary.

  4. Cook until the potatoes are cooked through.

  5. Garnish with chopped green onion and shredded Parmesan. Sreve with rice, pasta, buttered toast or just by itself.
