A Spanish tortilla is an omlette that is not flipped during cooking. Usually they contain potatoes, but I opted for lean ham and tomatoes.

Recipe Ingredients for My take on a Spanish tortilla

5 eggs
1/4 cup skim milk
3 slices Ham, Sliced, Extra Lean
2 Tomatoes, Red, Ripe
4 oz Cheese

Recipe Directions for My take on a Spanish tortilla

  1. Slice tomatoes thinly.

  2. Scramble eggs with milk and 2oz of the cheese, but do not pour into skillet yet.

  3. Heat ham in skillet until it begins to brown, then flip and repeat, around 45 seconds.

  4. saute tomatoes in separate pan

  5. place tomatoes in pan on top of ham slices, making an even layer.

  6. pour eggs on top of tomatoes and ham

  7. cook on medium until egg is halfway cooked

  8. when egg is halfway cooked, top with the other 2oz of cheese and put under the broiler until the rest of the egg is cooked

  9. turn onto plate, flipping it so the ham and tomatoes are on top.

  10. Slice and serve
