Recipe Ingredients for My Steel Cut Oats

1/2 cup steel cut oats
1 cup 2% milk
2 tsp Smart Balance
1/4 tsp salt
1 tsp brown sugar, unpacked
1/2 tsp cinnamon
2 tblsp chopped pecans
2 tblsp chopped almonds
2 tblsp golden raisins
2 tblsp dried cranberries
1/2 tsp vanilla

Recipe Directions for My Steel Cut Oats

  1. Toast 1/2 cup steel cut oats in 2 tsp Smart Balance until fragrant.

  2. Soak 1/2 cup oats overnight in 1 cup 2% milk or water. (if water, drain it the next morning & add milk)

  3. Next morning, give a good stir, add raisins & salt and bring to a boil/simmer. Cook for 5 min.

  4. Add cinnamon, pecans, brown sugar & vanilla. Top with 1 tblsp maple syrup each!

  5. (Save the other one in the fridge. Cover w/plastic wrap & make sure it covers the top of the oatmeal so a film doesn't develop.

  6. Add maple syrup if you like, but i think it's not worth it
