I got a recipe off the net and then REALLY screwed it up. This was the result. The bars are fabulous...maybe next time I'll actually read the recipe. :o)

Recipe Ingredients for My REALLY GOOD Granola Bar Mistake

6 cups oatmeal
2 cups slivered almonds
6 oz sweetened coconut
2 cups dried apricots
3 1/2 cups brown sugar
12 oz honey
2 oz butter
2 tsp vanilla

Recipe Directions for My REALLY GOOD Granola Bar Mistake

  1. Mix oatmeal, almonds and coconut together.

  2. Pour into roasting pan and roast to a light brown for about 15 minutes at 350.

  3. In the meantime, in a medium sauce pan add the brown sugar, honey, butter and vanilla. Cook on medium high until brown sugar is completely dissolved.

  4. When the dry ingredients are ready to come out of the oven, drop the heat to 300 and let oatmeal mixture cool slightly on a rack.

  5. Mix apricots into oatmeal, drizzle hot syrup over the top and mix thoroughly.

  6. Press this gooey mess into a jelly roll pan (cookie sheet with sides) and bake for 25 minutes. Cool on a wire rack for 15 minutes and run a knife around the edge.

  7. Once completely cooled, turn it out on a sheet of tin foil and cut into bars. I cut mine into 2X3 and sealed them into individual sandwich bags and froze them.
