Recipe Ingredients for my raspberry marmalade

2250 grams Raspberries
2000 grams Sugars, Granulated
1 tsp Cinnamon, Ground
5 tbsp Chipotles
1 ounce Tequila, 80 Proof

Recipe Directions for my raspberry marmalade

  1. Put the raspberries, sugar, a vanilla pod, chipotle chillies (preferably dried to the canned ones, add 5 or 6 to taste). Mix well and let it rest overnight.

  2. put on a middle-high flame until it boils, remove from heat and let it rest overnight.

  3. put at middle-low heat and wait until it boils, remove any foam that forms.

  4. After boiling for a few minutes, the liquid should become very viscous when cooled, then it is "gelating". Your marmalade is done.
