Prepared this in a cinch, stuck with fennel i had never used, and an opened can of tomatoes!

Recipe Ingredients for My quick and snazzy ratatouille

2 zuchini
1 medium onion
2 cloves garlic
28 oz. can tomatoes
8 basil leaves, fresh
2 tablespoons olive oil
1 bulb fennel
1 tablespoon rosemary, oregano and thyme, each

Recipe Directions for My quick and snazzy ratatouille

  1. Chop all ingredients, slicing the zuchini in halves and then semi-circles.

  2. Sauté the onions, garlic and fennel until onion is translucent.

  3. Add the zuchini, mixing until they are tender but still firm.

  4. Add the chopped tomatoes, the rosemary, oregano and thyme and let simmer, covered on low heat for at least 30-40mins.

  5. Add the basil and cover for another 5mins. Enjoy with cheese, baguette and wine for a tasty refined meal!
