This was my answer to just not getting enough carbs or fiber. The rolls are crusty, crunchy and have a slight sour dough taste.

Recipe Ingredients for My prefect 101 calorie whole wheat rolls

2 cups Whole Wheat Graham Flour
2 cups Gold Medal Unbleached All Purpose Flour
2 cups Gold Medal Whole Wheat Flour
1 tbsp Leavening agents, yeast, baker's, active dry
2 tsp salt
3 cups water

Recipe Directions for My prefect 101 calorie whole wheat rolls

  1. pour 2 cups All Purpose Flour, 1 cup of Whole Wheat Graham Flour, 1 cup of Gold Medal Whole Wheat Flour and your tbsp of yeast in to a large dough bowl.

  2. Add 2 to 2.5 cups of water slowly while stirring until the flour/water combination makes a thick batter.

  3. Cover with plastic wrap and let stand for 3 to 24 hours.

  4. Uncover and add salt stirring well. The better should almost have a "snot" consistency.

  5. Add remaining flour and cut it into the batter with a spatula, add water if necessary, the final dough should be sticky.

  6. Remove the dough from the bowl, spray it with Pam and replace the the dough in the bowl cover it again and let it raise for an hour.

  7. Cut the dough in to 24 pieces and roll them in to balls and place them on a sprayed cookie sheet (I line mine with aluminum foil for easy cleanup), then bake at 350. I do not know the time because my stove is off but you should have tan bottoms and hard but light tops.
