1st attempt - tasted awesome!!! In the good old days I would have made a 2nd one I liked it that much! originally had 15 grams of cheddar cheese but when I made it a 2nd time without the cheese - I didn't even miss it. I have a digital food scale which I use daily & that's why I listed almost everything in grams :)

Recipe Ingredients for My Omelet #1

60 grams red bell pepper
55 grams white mushrooms, sliced
1/2 teaspoon garlic, minced
120 grams eggbeaters
35 grams fat free sour cream

Recipe Directions for My Omelet #1

  1. saute bell pepper, mushrooms, and minced garlic in nonstick pan sprayed with a little Pam or something like it.

  2. mix peppers, mushrooms and garlic with the eggbeaters and pour in preheated prepared skillet.

  3. top with the sour cream and 1 or 2 tablespoons salsa.
