Recipe Ingredients for My Mushroom Broccoli Carrot Couscous

3/4 cup couscous
1 cup boiling water
1 cup of broccoli, sliced
1 carrot, sliced
2 garlic cloves, crushed
1/2 white onion, diced
2 cups mushrooms, sliced,
1 tsp sesame seeds
2 tbsp olive oil
1/4 tsp salt and pepper

Recipe Directions for My Mushroom Broccoli Carrot Couscous

  1. Pour boiling water over couscous in a bowl and cover.

  2. Crush Garlic and add to hot oil in a skillet. Fry garlic and diced white onion for one minute. Add the sliced mushrooms and saute until lightly golden. Stir in the chopped broccoli and sliced carrot and heat through. Add the cooked couscous.

  3. Spoon onto plates and if you like, add a portion of a protein dish you have cooked separately, such as soy-honey chicken.

  4. Leftovers combine beautifully with this quickly cooked couscous.
