If you're going to be bad, this is the way to do it: maybe high fat but at least moderately healthy. Leftover lamb-spinach mixture and eggplant slices taste great in a burrito wrap with rice the next day.

Recipe Ingredients for My Mousaka

1 large eggplant, cut in quarter inch slices
3 tbsp olive oil
3/4 lb ground lamb
1 tsp garlic
1 tsp salt
2 tbsp mint, chopped
3 c eggnoodles
4 c baby spinach

Recipe Directions for My Mousaka

  1. Sweat the eggplant by laying on a pan covered in paper towels. Then layer paper towels over the eggplant. Cover with heavy books and let sweat for 2 hours - OR use a microwave-safe plate instead and microwave slices at HALF or MEDIUM power for about 2 minutes.

  2. Place eggplant slices on non-stick baking sheet. Brush with olive oil, and roast in oven at 365 degrees until the eggplant looks browned and possibly crispy.

  3. Begin boiling the egg noodles.

  4. In large skillet or wok, brown the ground lamb and garlic. When nearly thoroughly cooked, add the mint and salt.

  5. Toss in the baby spinach and cook until spinach is soft but still bright green.

  6. Serve by placing eggplant slice over egg noodles, and spooning lamb-spinach mixture over the eggplant.
