9-13-10. Serving size about 1/2 cup. 1 can kidney beans = 1 1/2 c cooked beans 1 cup dry kidney beans cooks up to about 3 cups. Recipe calls for 2 cans ea kinds of beans.

Recipe Ingredients for My Minestrone Soup

2 T. olive oil
2 cups chopped zucchini, with skin
1 cup chopped celery
4 cloves garlic
4 cups vegetable broth
15 oz can diced tomatoes
3 cups red kidney beans
3 cups cooked great northern beans
1 cup shredded carrots
1 cup frozen grean beans
2 tsp dried parsley
1 1/2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
1 cup frozen spinach

Recipe Directions for My Minestrone Soup

  1. Cook beans until completely soft.

  2. Sautee celery, garlic and zucchini in oil.

  3. Add rest of ingredients and simmer x 30 minutes. Optional - add spinach the last ten minutes only.
