Recipe Ingredients for My Mexicali Turkey Tostadas

32 oz Fresh Ground Turkey - Lean
1 1/2 cup Dark Red Kidney Beans
432 grams Corn, Sweet, Yellow
1 cup,+chopped+or+diced Onions
2 clove Garlic
1 tbsp Vegetable Oil, Canola
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Peppers, Sweet, Green
1 tbsp Cumin Seed
2 tsp Chili Powder
1/2 head, medium (6" dia) Lettuce, Iceberg
1 fruit without skin and seeds Avocados
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe

Recipe Directions for My Mexicali Turkey Tostadas

  1. Saute oil, crushed garlic, chopped onion, chopped pepper and tomato on stove top in pan.

  2. Add turkey, cumin and chili powder.

  3. Simmer for 10 minutes until cooked through, stirring occasionally.

  4. Add beans and corn and cook for additional 10 minutes, stirring.

  5. Serve on top of sprinkling of mixed cheese with Tostada.

  6. Fix with lettuce and avocado, additional salsa or low fat sour cream optional if desired.

  7. Chicken can be substituted for turkey.

  8. Should make 8-10 servings.
