Recipe Ingredients for My Mediterranean Chicken

8 thigh, bone removed Chicken, Thigh
1 serving Quartered Artichoke Hearts
1 oz Dates
0.25 cup, packed Raisins, Golden Seedless
6 tsp Domino Light Brown Sugar
12 olives Manzanilla Pimiento Stuffed Olives
2 tbsp Aged Balsamic Vinegar
3 clove Garlic
1 tbsp, leaves Basil, Dried
1 tbsp, drained Capers, Canned
1 tbsp Oil Olive Extra Virgin
2 tablespoon Oregano
1 dash Salt, Table
0.5 cup (8 fl oz) Soup, Chicken Broth Or Bouillon

Recipe Directions for My Mediterranean Chicken

  1. Combine chicken & everything EXCEPT broth in a ziplok bag. Squeeze out air and turn to coat. Refrigerate, turning occasionally, for at least 8 hours or overnight.

  2. Preheat oven to 350

  3. Remove chicken from marinade and place in a single layer in a casserole or roasting pan. Pour marinade over the chicken and then pour chicken broth over all.

  4. Bake until done, approximately 35 - 45 minutes.

  5. Serve with brown rice or cous chous.
