Based on Cook's Illustrated's and Mom's Lentil Soup

Recipe Ingredients for My Lentil Soup

2 small onions
2 c carrot, diced
2 c lentils
28 ounce crushed tomatoes
1 tbsp garlic, minced
1 tsp salt
6 ounces chicken
2 tbsp balsamic vinegar
5 c fat free low sodium chicken broth
10 ounces frozen spinach

Recipe Directions for My Lentil Soup

  1. Saute onions and carrots with 1 tsp salt.

  2. Add tomatoes and garlic.

  3. Add chicken sausage.

  4. Add broth and 9 cups water.

  5. Add lentils.

  6. Bring to simmer and simmer for 1 hour.

  7. Add vinegar and spinach.

  8. Simmer 15 minutes.
