A modified recipe from Shop "n' Cook Very excellent.

Recipe Ingredients for My Homemade Carrot Soup

1 medium onion
1 lb carrots
2 small potatoes
2 cans chicken broth
1 tbsp sugar
1 tbsp parsley
2 tbsp light olive oil

Recipe Directions for My Homemade Carrot Soup

  1. Clean peel and grate the carrots and potatoes and set aside.

  2. Heat olive oil in 3 quart sauce pan over med high heat.

  3. Finely chop the onion. and add to oil. After a small browning period add the grated carrots and potatoes lower heat to medium and cover. Cook until the mix softens, approximately 5-10 minutes.

  4. Add broth, sugar and parsley flakes and bring to boil.

  5. Reduce heat and simmer 30-45 minutes.

  6. Let cool slightly before serving.
