Delicious artesian bread. This makes 4 POUNDS of dough.

Recipe Ingredients for My homemade bread

6 1/2 cups Gold Medal Whole Wheat Flour
3 cups water
1 1/2 tbsp kosher salt
1 1/2 tbsp yeast

Recipe Directions for My homemade bread

  1. Fill lidded NON-AIRTIGHT container with 3 cups of water between 100-105 degrees.

  2. Sprinkle salt and yeast into water.

  3. Add the flour and stir until just combined.

  4. DO NOT KNEAD.

  5. Place lid or saran wrap over container. If using saran wrap, leave a small corner of the container uncovered so the gas produced by the yeast can escape. 1 inch or so is plenty.

  6. Leave on counter for two hours. Dough can then be stored in fridge for up to two weeks, or left on the counter for a few days to develop delicious sourdough flavor. Do not leave out for more than 4-5 days or the yeast will die and the bread will be ruined.

  7. To Bake:

  8. Preheat oven to 450 degrees. If using Pizza/baking stone it should be on bottom rack while oven heats.

  9. Place a metal pan on top shelf. When oven is finished heating, add 1 cup hot water- this keeps the bread from drying out.

  10. Oil knife/hands and remove desired amount of dough. It helps if you chill the dough for a few hours before this, as it makes the dough less sticky. Shape into ball and either place directly on pizza stone dusted with cornmeal or place into bread pan.

  11. Bake for approximately 20-30 minutes until bread has a nice thick golden brown crust.

  12. Remove from heat and allow to cool for 5-10 minutes.

  13. Cut a slice and slather with butter/preserves/honey etc.

  14. Devour.
