this taste just like a classic "fish and chips" with out all the heavy breading or french fries. very light, great for summer!!!

1 pound Cod, Fillet
2 tbsp. Light Butter
1/4 cup lemon juice
1 tbsp. Parsley, chopped
1 tsp. Salt
1/4 tsp. Black pepper
1/4 tsp. paprika (opt)
1 small Onion, thinly sliced (opt)

Recipe Directions for my Grilled "Fish n chips" (no chips - no bread)

  1. Use heavy aluminimum foil, cut into large squares

  2. place equal pieces of fish in the middle of each square

  3. in the micro (or stove top) melt butter

  4. add to butter the lemon juice, parsley, salt and pepper, blend well.

  5. pour the butter mixture over each piece of fish (try and keep it equal)

  6. (opt) sprinkle w/ paprika, and top with onion slices.

  7. fold up the foil to make a tightly sealed "pocket"

  8. grill for 5 - 7 minutes each side - test for flakyness - enjoy!!
