Makes 4 servings



Easy and no flour- great for planning ahead with breakfast.

Recipe Ingredients for My frittata

3 eggs
1/2 cup fat free cottage cheese
1/2 cup onion
1/2 cup red pepper
1/2 cup ham
1/4 cup skim milk
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon basil
1/4 cup mushrooms
1 slice swiss cheese

Recipe Directions for My frittata

  1. cook veggies until golden brown and soft (in some butter or pam), throw in ham. Add spices- basil, salt and pepper and whatever you want. Fresh basil is delish too.

  2. Mix together eggs and milk and cottage cheese.

  3. Pour egg mixture over veggies and ham.

  4. Cover and let sit on medium to medium low heat until it's cooked all the way through. Then sprinkle with whatever type of cheese you want, let it melt. Cut it into 4 pieces. Yum. Great to take to work for breakfast.
