This is a delicious knod to my favorite San Fran burrito stand. It is very filling, packed with vitamins and has a good balance of carbs, protein and healthy fats.

Recipe Ingredients for My Favorite Recipe

2 cup Wild Rice, Cooked
2 cup Beans, Black, Mature Seeds
1 cup kernels Corn, Sweet, Yellow
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 avocado, NS as to Florida or California Avocados
0.13 cup Coriander Leaves
1 tsp Quality Spices Cumin
1 tsp Chili Powder
1 fruit (2" dia) Limes
1 tsp Garlic Powder
2 tbsp Olive Oil
8 tortilla Sprouted Wheat Tortillas-Burrito size
0.5 cup Oikos Organic Greek Yogurt

Recipe Directions for My Favorite Recipe

  1. Combine rice, beans, corn, chopped tomato, diced avocados, and minced cilantro in a bowl.

  2. In a small container (I uses a jelly jar) combine juice from one lemon and equal parts olive oil with cumin, chili powder and garlic powder. Give it a good shake (or whisk if you don't have a lid).

  3. Place about 3/4 cup servings on each warmed tortilla, and top with a tablespoon of greek yogurt.

  4. You can add salsa or other desire toppings here, too. Just be sure to count those calories ;-)

  5. Roll it up and enjoy!
