Recipe Ingredients for My favorite pancakes

1 cup all-purpose flour
1 tablespoon brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup chopped pecans
1 large egg, beaten
1 1/4 cup milk
1 tablespoon canola oil

Recipe Directions for My favorite pancakes

  1. Mix together first five ingredients. In another bowl whisk the remaining ingredients. Add wet mixture to dry mixture and whisk until incorporated. Batter will be thin.

  2. Prepare griddle (I use non-stick and coat with a fine layer of melted butter wiped off with a paper towel)

  3. Use 1/4 cup measure to pour batter onto griddle. Cook over medium heat about two minutes on each side or till pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry.
