Felt like having vegetables this morning, so i threw some veggies together in an omelet. Very happy with results.

Recipe Ingredients for my favorite omelet

1 Eggs
2 egg whites
1/4 zucchini, sliced
1/8 onion,chopped
2 jalapeno peppers
2 white mushrooms
1/2 small tomato

Recipe Directions for my favorite omelet

  1. saute mushrooms, onions, zucchini, and tomatoes, until soft about 3 minutes.

  2. Mix eggs and eggwhites in bowl. Spray pan with cooking spray and cook eggs until a little firm. Turn over, add veggies.
