Recipe Ingredients for My favorite chili, vegetarian, slow-cooker

2 cups dried pinto beans
6 cups water
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1/2 teaspoon dried oregano
1/2 teaspoon cumin seeds
1/2 teaspoon anise seed
1/2 teaspoon coriander seeds
1/2 onion, diced
3 cloves garlic, finely minced
28 ounces crushed tomatoes, canned
1/4 cup unsweetened cocoa
2 tablespoons chili powder
1/4 cup diced red pepper
1/4 cup diced green pepper
1/2 cup frozen corn kernels
1/2 cup non-fat sour cream
1/4 cup green onions, sliced
1/2 cup cilantro, chopped

Recipe Directions for My favorite chili, vegetarian, slow-cooker

  1. Thoroughly wash beans and place them, along with water, into the slow cooker insert. Grind spices (if using whole--that would be 6 allspice berries, 1 cinnamon stick) in an electric coffee mill and add to beans. Cover and cook on low for 6 hours, or until beans are tender.

  2. Add diced onion, garlic tomatoes, cocoa powder, and chili powder to beans and continue cooking for 2hours.

  3. About 1/2 hour before serving, add red and gree bell pepper and corn kernels to the beans so they retain their crisp, fresh taste and texture.

  4. Ladle into bowls and top each bowl with a dollop of sour cream and a sprinkling of green onion and cilantro.
