My Favorite Bolognese Recipe

A family mainstay, and a great way of getting some serious veg into the kids. Maybe not quite a straight A student nutritionally, but handy if you have picky eaters.

Recipe Ingredients for My Favorite Bolognese

500 grams turkey, minced
1000 ml tomato, sieved (passata)
2 red bell peppers
3 cloves of garlic
1 onion, finely chopped
2 carrots, finely chopped
1 cup of celery
2 leeks, finely chopped
3 tbs fresh thyme
3 tbs fresh rosemary
1 tbs dried oregano
2 tbs dried basil
2 tbs balsamic vinegar
1/2 cup red wine
1 tbs extra virgin olive oil
500 grams whole wheat pasta

Recipe Directions for My Favorite Bolognese

  1. Chop your veg. Chop them nice and fine - if you have picky eaters, you may even want to consider giving them a whizz in the blender. Don't do this with onion though - they go mushy.

  2. Heat a tablespoon of extra virgin olive oil over a medium/low heat in a big pot, and throw in all the veg - except the garlic. garlic burns too easily and loses flavor, I think. Soften your veg the way you like it - for picky eaters, cook for a full 10 minutes until they are nice and soft.

  3. Add the garlic and the mince and brown the mince. This should not take long with turky mince.

  4. Lower the heat to low, and add the sieved tomato. You can buy packs of passata at most supermarkets, or you can make your own fresh.

  5. Finely chop the fresh thyme and rosemary and add in. Add the dried herbs as well, and heat your sauce through. You want it to be on the verge of boiling, but do not let it simmer away - it will seperate and become watery. Just heat it slowly and stir whenever it starts to bubble. About 20 minutes should do the trick

  6. Add the balsamic vinegar, and red wine. You are just finishing it off at this stage, so add to taste.

  7. Cook some nice wholewheat spaghetti, and serve with a sprinkling of fresh grated parmesan cheese.
