Yummy egg dish with potatoes, broccoli, onions and cheddar cheese.

Recipe Ingredients for My Egg Fritata

2 eggs
4 oz broccoli
4 oz potato
1/2 oz onion
1 tsp olive oil
1 oz cheddar cheese
1/8 tsp salt
1/4 tsp black pepper
1/8 cup 2% milk

Recipe Directions for My Egg Fritata

  1. Prep:

  2. I like to par cook the potatoes in the microwave. I slice the potato about 1/4" thick, place in a single layer on a plate and nuke them for 3 min.

  3. While the potatoes are cooking, dice the onion.

  4. Prep the broccoli, cut the florets in half

  5. Cube the cheese

  6. Finish by cubing the potatoes

  7. Crack eggs in a separate bowl, add milk , salt and pepper to taste. Scramble.

  8. Cook:

  9. Heat oil over medium flame, add onions to heating oil.

  10. Add potatoes to pan.

  11. Do not stir, let brown over 2min.

  12. Add broccoli to pan.

  13. Add salt and pepper.

  14. Stir all together, then spread into a single layer in bottom of the pan.

  15. Cover the pot and let brown for 2-3 min.

  16. Add eggs to mixture. Let bottom brown for 1-2min uncovered. Sprinkle cheese on top.

  17. Cover pot, turn down the flame to low heat for another 2min., until cheese melts.

  18. Serve immediately.
