From "Artisan Breads in Five Minutes a Day"

Recipe Ingredients for My Deli Rye Bread

3 cups water
1 1/2 tablespoon instant yeast
1 1/2 tablespoons sea salt
1 1/2 tablespoons caraway seeds
2 cups dark rye flour
4 1/2 cups unbleached all-purpose flour

Recipe Directions for My Deli Rye Bread

  1. I make this frequently as it is super easy.

  2. Just combine all of the ingredients, mix to a dough, it will be sticky.

  3. Let proof until doubled.

  4. Then, place into the refrigerator for up to 2 weeks, - or make up and bake immediately.

  5. Preheat even to 450 F.

  6. Place a heat-proof pan into the bottom.

  7. Before adding the bread, pour one cup of hot water into the pan to create some steam.

  8. Bake the bread on a stone, with a little corn meal or semolina for added bottom crust. Bake for about 30 minutes, or until bread sounds hollow, when tapped at the bottom.
