Chicken stock made from left-over roast chicken - what I use all the time and also freeze in very small quantities for cooking

Recipe Ingredients for my chicken stock-soup

3 pound whole chicken
4 carrots, halved
4 stalks celery, halved
2 cup+slices parsnips
1 large onion, halved (leave skin on for colour)
2 garlic cloves
1 tbs peppercorns
1 tbsp,+crumbled bay leaf
10 cups water (or to cover - approx)

Recipe Directions for my chicken stock-soup

  1. Put the chicken, carrots, parsnips, celery, garlic, peppercorns, bay leaf and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).

  2. Take everything out of the pot. Strain the broth.
