all whole wheat flour muffins, with no refined sugar.

Recipe Ingredients for my banana muffins

1 1/2 cup whole wheat flour
1 1/4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 egg
1 cup banana, mashed, ripe
1/2 cup grated carrot
3 tbs maple syrup

Recipe Directions for my banana muffins

  1. Mash ripe bananas, and add maple syrup and egg.

  2. 2. Preheat the oven to 375 degrees F (190 degrees C). Grease 20 small cup muffin tins, or line with mini paper muffin liners.

  3. 3. In a large bowl, stir together the flour, grated carrot, baking powder, baking soda, and cinnamon. In a separate bowl, mix together the egg, mashed banana and maple syrup. Add the wet ingredients to the dry, and mix until just blended. Fill prepared muffin cups 3/4 full.

  4. 4. Bake for 10 minutes in the preheated oven, or until the top springs back when lightly touched.
