6 points (adapted from a Bon Appetit recipe using 2 whole chickens, I modified the recipe to make it more healthy, just haven't tried it yet)

Recipe Ingredients for Mustard Roasted Chicken Breasts

1/2 cup Dijon mustard
2 tbsp extra-virgin olive oil
2 tbsp chopped fresh Italian parsley
2 tablespoons fresh thyme leaves
4 garlic cloves, peeled, crushed
48 oz chicken breasts

Recipe Directions for Mustard Roasted Chicken Breasts

  1. Whisk mustard, olive oil, parsley, and thyme in small bowl to blend. Stir in garlic. Spread mustard mixture generously over chicken breasts. Place in glass baking dish; cover and refrigerate at least 4 hours

  2. or overnight.

  3. Let chicken stand at room temperature 30 minutes. Sprinkle chicken generously inside and out with salt and pepper.

  4. Preheat oven to 400F. Spread any

  5. accumulated mustard marinade from dish over chicken. Place rosemary and sage sprigs atop chicken. Roast chicken until juices run clear 35 minutes.
