Recipe Ingredients for Mustard Carrot Casserole (Nubella)

1 tbsp Dijon mustard
2 tbsp grated Parmesan cheese
1/2 tsp thyme
1 lb carrots
1/2 cup skim milk
1 tsp cornstarch
1/2 cup evaporated skim milk

Recipe Directions for Mustard Carrot Casserole (Nubella)

Preheat oven to 375F. Bring a large saucepan full of salted water to a boil. Blanch carrots in boiling water 1 minute. Drain thoroughly in a colander. Rinse carrots under cold running water, then peel and coarsely grate. Transfer grated carrots to a buttered shallow baking dish. Combine skim milk and cornstarch in a jar with a tight-fitting lid. Shake vigorously. Combine with remaining ingredients, except Parmesan, in a bowl. Mix thoroughly and pour over carrots. Sprinkle with Parmesan and bake 45 minutes, or until cheese is golden.
