A gratin can be topped with cheese or with breadcrumbs mixed with bits of butter (or in this case, olive oil). It is broiled until brown and crispy. You can use it as an appetizer or as a main (for fewer people, obviously).

Recipe Ingredients for Mussels Gratinee

32 oz Mussel
4 oz Wine
2 oz Breadcrumbs
1 clove Garlic
0.5 cup Parsley
0.529 oz Extra Virgin Olive Oil

Recipe Directions for Mussels Gratinee

  1. Heat a large stainless steel pot or Dutch oven over medium-high heat. Add mussels and wine when pot is hot. Cover immediately and steam for 5 to 6 minutes without removing lid. During cooking process, shake pan every couple of minutes. Mussels will be cooked through when they're open. Discard any that haven't opened.

  2. Drain mussels into a colander set over a large bowl. Let cooking liquid sit for 2 minutes to decant. Pour liquid into a small saucepan, being careful to leave sand and grit behind. Bring liquid to a boil and reduce by half.

  3. Separate the two mussel shells. Carefully detach the mussel and place it inside the shell that does not have the small, white abductor muscle. Discard the other shell half. Place filled shells in a single layer on a rimmed baking sheet.

  4. Place breadcrumbs, garlic, parsley, olive oil, and a pinch of salt in food processor. Pulse until all ingredients are chopped and combined.

  5. Preheat broiler. Add 1 to 2 tablespoons of reduced cooking liquid to breadcrumbs and mix well into a paste. Mixture should look like wet sand and hold together when pinched between fingers, but not be soggy or runny. Make a ball with about 1 teaspoon breadcrumbs and flatten slightly. Place on top of mussel and gently press down to adhere. Repeat with remaining mixture until all mussels are covered.

  6. Broil mussels until breadcrumbs begin to brown, about 3 to 4 minutes. Divide among plates and serve hot. Pour remaining cooking liquid into a small pitcher, so that guests can drizzle it over mussels at last moment.

  7. Serves 8 as a starter or 16 as an appetizer
