This may sound disgusting, but trust me, it is FAR from it! The vanilla yogurt (I use fat-free) makes the mussels (I use very small fresh ones) taste sweet. Great way to start the morning!

Recipe Ingredients for Mussel Yogurt Omelet

3 tablespoons egg whites
2 medium mushrooms
6 small mussels
1 teaspoon extra virgin olive oil
2 tablespoons vanilla yogurt (fat free)
2 tablespoons ground flax seed

Recipe Directions for Mussel Yogurt Omelet

Cook mussels as according to instructions. Drain, rinse and shell them. Heat frying pan with olive oil and add mushrooms and mussels. You may chose to add garlic and onion. Cook for one minute on medium-high heat and add yogurt. Turn down heat and let simmer for 3 minutes. Add egg whites and ground flax seed and cook thoroughly. Remove from heat and enjoy!
