Delicious, Quick and simple, on you plate in 10 mins! (I use Frozen Greenshell mussels to speed things up -half shell- so 1 skip step 2)

Recipe Ingredients for Mussel Casserole

170 g mussel meat , (about 300g of half shell mussels)
6 fl oz red wine
1 tsp olive oil
40 g onion, finely chopped
1 cloves garlic, chopped
1 tsp red chili, finely chopped
1 tbsp tomato paste
1 tbs chopped oregano
1 salt
1 black pepper

Recipe Directions for Mussel Casserole

  1. Scrub the mussels to remove any mud or sand

  2. Remove the beards by pulling away the hairy protusion between the 2 shells (if using fresh whole mussels) Rinse mussels in a bowl of clean water. discard any mussels that do not close when tapped- they are dead and should not be eaten.

  3. Place mussels in large saucepan.Pour in the wine and cook for 5 mins. shaking the pan occasionally until shells open, remove and discard any that do not open.

  4. Remove mussels from pan with slotted spoon, strain cooking liquid throuh a fine strainer set over bowl, reserving the cooking liquid.

  5. heat oil in skillet, add onion, garlic and chili and cook for 4-5 min or until softened. Add reserved cooking liquid to skillet and cook for 5 min.

  6. Stir in tomato sauce, oregano and mussels and cook until hot.

  7. Transfer to serving bowls and serve with toast or crusty bread to mop up juices!
