Tasty little mushroom slices in a light gravy.

Recipe Ingredients for Mushrooms in Gravy

1 tbsp olive oil
1 tbsp flour, all purpose, enriched, unbleached
2 cups organic low sodium chicken broth
4 cups sliced mushrooms
1/2 tsp salt
1 tsp flour (optional)

Recipe Directions for Mushrooms in Gravy

  1. Mix the roux from the flour and the olive oil in a non-stick pan. cook on medium heat briefly.

  2. Add 1/2 cup broth, stirring until smooth and completely combined. Allow to thicken. Repeat process twice more.

  3. If desired, mix that last teaspoon of flour with a titch of water to make a (thick doughy) paste. Add to the gravy and stir until fully, completely dissolved.

  4. Mix in mushrooms one cup at a time, each time allowing to cook down a bit.

  5. Sprinkle on salt. Add last half cup of broth. Stir in and allow to cook.
