Recipe Ingredients for Mushrooms with cumin and coriander

3 tbsp olive oil
1/2 tsp cumin seeds
12 oz mushrooms
3 cloves garlic
10 g ginger
1 tsp cumin, ground
1 tsp coriander, ground
1/4 tsp turmeric, ground
1/2 tsp cayenne
1 tbsp tomato puree
1/4 tsp salt
3 tbsp coriander

Recipe Directions for Mushrooms with cumin and coriander

  1. heat the oil in a wok or similar till it's hot.

  2. Add cumin seeds, then the mushrooms.

  3. Stir and fry till the mushrooms look silken.

  4. Now add garlic, ginger, ground cumin and coriander, turmeric and cayenne.

  5. Continue to stir and fry for 2-3 minutes.

  6. Then add the tomato.

  7. now put in about 120ml of water, bring to the boil and cover (I never bother to cover it), simmer gently for 10 minutes.

  8. Stir in the coriander leaves just before stirring.
