This is a lighter variation of the traditional dish made with cream. Very mushroom-y and delicious.

Recipe Ingredients for Mushroom Zuchinni Fettuccine (Light)

12 oz. pasta, fettuccine, whole wheat
3/4 c. Smart Balance
3 1/2 c. soy milk, unsweetened
4 c. zucchini
3 mushrooms
1/4 c. whole wheat flour
2 cloves garlic

Recipe Directions for Mushroom Zuchinni Fettuccine (Light)

  1. Boil large pot of water

  2. Cut zucchini lengthwise, then cut into 1/2 inch sections (wedges)

  3. Slice mushrooms (cut crosswise also for smaller pieces)

  4. Chop garlic

  5. Cook pasta in boiling water for 7 minutes

  6. Add zucchini and Smart Balance to medium heat.

  7. Cook until Smart Balance melts

  8. Add mushrooms

  9. Cook 10 minutes

  10. Add soy milk and cook an additional 15 minutes or until Smart Balance turns nice mushroom color.

  11. Add garlic

  12. Add flour, whisking in with fork or whisk

  13. Parmesan cheese for added flavor

  14. Remove from heat and combine with drained pasta

  15. Serve onto plates

  16. (optional) sprinkle with fresh grated
