Great for vegetarians. Quick and easy with minimal prep and cleanup. Try different diced tomato varieties for a lower sodium, lower calorie versions. Great by itself, and very filling.

Recipe Ingredients for Mushroom Tomato Spinach Sauce a la Chris

29 oz del monte diced tomatoes with basil
2 cups crimini mushrooms
10 oz frozen spinach
5 tbsp olive oil
2 cloves (6 grams) garlic
1 tsp ground dried basil

Recipe Directions for Mushroom Tomato Spinach Sauce a la Chris

  1. Oil, garlic, and 1 package crimini mushrooms (chopped) in a large frying pan. Cook over low heat until mushrooms shrink to about half their original size. (It's easiest to start with a little olive oil and only add as much as the mushrooms take up as they cook).

  2. Cook spinach in microwave per directions on package.

  3. Add 2 cans of petite diced tomatoes.

  4. Cook off water until you have a saucy consistency (however you like it).

  5. Add previously microwaved spinach just before removing the pan from heat and serving over pasta.
